For the base:

For the joke:

250 g raw canneloni (22 tubes)

500 g of beef

250 g veal

150 g pork

2 eggs

1 onion

4 cloves of garlic

2 tablespoons Parmesan cheese

4 crushed rusks or 2 to 3 glasses of breadcrumbs

Nutmeg

Sweet pepper

Step 1
For the joke:

In this recipe cannelloni tubes must be used raw.
Step 3
With a meat mincer, chop (or have chopped) the meat, mince the onion and garlic and mix everything in a bowl.
Step 4
Put a drizzle of neutral oil in a frying pan and fry the stuffing in it, crumbling it with a spatula over high heat for 5 minutes.
Step 5
Add a drizzle of olive oil and evaporate the mixture for 6 minutes over low heat.
Step 6
Season with salt and pepper at the end of cooking and set aside.
Step 7
In this still warm stuffing, add parsley and chopped basil, nutmeg powder, sweet pepper and whole eggs.
Step 8
Mix by hand, add the rusks or breadcrumbs until you obtain a barely consistent filling while incorporating the Parmesan cheese.
Step 9
Set aside 50 g of this stuffing for the sauce.
Step 10
Generously butter an oven dish.
Step 11
Stuff the cannelloni, butter them lightly (with butter and ointment) and align them in the dish.

The sauce:

Lightly mix the tomatoes in the juice to remove large pieces.
Step 14
In a saucepan, drizzle with neutral oil, add the peeled tomatoes, tomato sauce with herbs of Provence, Tomacouli sauce and sugar, mix and reheat over low heat.

Meanwhile, put a drizzle of neutral oil in a frying pan and lightly fry the onion, garlic, parsley and basil finely chopped for about 5 minutes, stirring well with a spatula.
Step 16
Put this preparation in a food processor, add the 50 g of stuffing previously reserved and mix lightly. (3 to 4 pulses), season with salt and pepper to taste.

Stir into the tomato sauce pan with a spatula until completely diluted (1 to 2 minutes).

Pour this sauce over the cannelloni, spreading them one by one with a spatula to distribute the sauce evenly.

Sprinkle the parmesan cheese, add a drizzle of olive oil, add the grated gruyère and sprinkle with a few knobs of butter

Preheat the oven to 200° and bake for 20 to 25 minutes (check the cooking of the cannelloni with the tip of the knife).

Serve with a salad and a fresh rosé.
