1 shortcrust pastry

250 g cherry tomato

4 tablespoons of whole thick cream

2 tablespoons mustard

1 tablespoon black tapenade

1 tablespoon chopped basil

Grated Gruyère cheese

Olive oil

Step 1
Preheat the oven to 210°C (thermostat 7).
Step 2
Roll out the shortcrust pastry in a pie dish, then prick it a little with a fork.
Step 3
In a bowl, combine the thick crème fraîche with the mustard, black tapenade and basil.
Step 4
Spread the mixture evenly over the bottom of the dough, then place the cherry tomatoes, cut in half, cut side down towards the bottom of the dish.
Step 5
The easiest way to distribute them evenly is to make a circle starting from the edge of the dough.
Step 6
Sprinkle with grated gruyère cheese and drizzle with zigzag olive oil.
Step 7
Sprinkle with herbes de Provence, avoid salting because tapenade and gruyère already salt the pie.

A very simple and quick pie to bake, ideal for summer and very popular with me! Serve with a green salad.
