1 kg of white beans to shell

2 onions

100 g smoked bacon

4 tablespoons of olive oil

4 cloves of garlic

2 sprigs of basil

500 g ripe tomatoes

1 bouquet garni

35 cl vegetable or poultry broth

Pepper

Salt

Preparation: 30 min
Cooking time: 1 h
Step 1
Brown the chopped onions, bacon cut into bacon and peeled and crushed tomatoes. Simmer until the sauce is thickened.
Step 2
Pour the beans into the sauce and cook covered for 20 minutes, over low heat, stirring occasionally.
Step 3
Heat the broth with the bouquet garni and 2 crushed garlic cloves.
Step 4
Pour over the beans and continue cooking for 1 hour under cover. Season with salt and pepper halfway through cooking.
Step 5
Add a little water during cooking if necessary.
Step 6
Mortar the remaining garlic cloves and basil. Gradually add the oil.
Step 7
Add this purée to the beans at the end of cooking.
Step 8
Mix and serve very hot.
