1/2 package of lasagna dough

250 g ground beef meat

150 g sausage

1 can diced tomato

1 bottle of tomato puree (passata)

1 onion

1 carrot

1 celery stalk

Olive oil

Pepper

Salt

Basil (fresh if possible)

Mozzarella
For the béchamel sauce:

Butter

Maizena

Milk

Cooking time: 35 min
Step 1
Wash and finely chop the onion, carrot and celery stalk (taking care to remove the leaves that will be saved for later).
Step 2
In a pot or casserole dish, pour a base of olive oil and add half of the mixture previously prepared, then add all the tomato.
Step 3
Then add a bouquet of celery leaves and two stalks of whole basil, which will be removed at the end of cooking from the sauce.
Step 4
Prepare a classic béchamel sauce and set it aside.
Step 5
Then take another container and add a base of olive oil, the rest of the minced meat (onion + carrot + celery), then add the sausage meat, cook for about 5 minutes and add the beef.
Step 6
When the mixture has taken on its colour, remove it from the heat and mix it with the béchamel sauce.
Step 7
If you have time, cook the tomato sauce for about 1 hour over low heat, adding a little water if necessary.
Then proceed in the usual way by making a layer of pasta, a layer of tomato, a layer of béchamel + meat, adding a few basil leaves between each layer.
Step 8
Bake for about 35 minutes in a medium oven and cover with mozzarella cheese cut into small pieces a few minutes before serving.
Author's note
Beware of buffalo mozzarella, it is excellent and being Neapolitan, I only eat this one, but it does not support cooking! Italians use the "fior di latte" for cooking, i.e. the one found in France.
