Provençal Tuna :

1 kg of fresh tuna

1 kg of ripe tomatoes

3 red peppers

100 g green and black olives

3 onions

4 cloves of garlic

1/2 bunch of basil

15 cl dry white wine

Olive oil



Preparation: 30 min
Cooking time: 1 h
Step 1
Wash and cut the tomatoes into quarters, the peppers into strips and the onions into rings.
Step 2
Peel and crush the garlic. Chop the basil.
Step 3
Scald the olives for 2 minutes, and pitted them.
Step 4
Heat 3 tablespoons of oil in a casserole dish. Throw in the onions and peppers, sauté for 5 minutes, stirring.
Step 5
Add garlic, tomatoes, salt and pepper.
Step 6
Brown the salted and peppered tuna in another frying pan with a base of oil. Once it is golden brown, remove it.
Step 7
Add the olives to the vegetables, wet with white wine and place the tuna on top of the vegetables.
Step 8
Cover and simmer for 1 hour over low heat. Sprinkle with chopped basil 5 minutes before the end of cooking.
