1 bottom of puff pastry

1 eggplant

2 courgettes

4 tomatoes

1 mozzarella

Herbs of Provence

Pepper

Salt

basil leaf

Olive oil

Step 1
Wash and dice aubergine and courgettes without peeling them, then fry them in a frying pan in olive oil.
Step 2
Halfway through cooking (the vegetables have started to lose their water), add the washed tomatoes, cut into thick slices. Add herbes de provence, salt and pepper.
Step 3
Line the tart pan with puff pastry, pour in the vegetables when they are golden.
Step 4
Spread mozzarella slices on top. Sprinkle with chopped basil leaves.
Step 5
Bake in a hot oven for 20 minutes, until the dough is golden brown and the mozzarella cheese is melted.
