Thai green curry :

Number of people

For the green curry:

3 lemongrass

3 shallots (Thai if possible)

lime zest

3 cloves of garlic

4 green peppers

1 teaspoon sugar

2.5 ginger or better galangal

1 tablespoon nuoc mam

30 g fresh coriander (if possible with roots, keep stems)

1 teaspoon coriander powder

1 teaspoon cumin

1 teaspoon turmeric

1 teaspoon of coconut milk
For the rest of the recipe:

40 raw shrimps

2 medium eggplants

2 red peppers, cut into thin strips

2 cans of coconut milk

1 tablespoon nuoc mam

1 teaspoon sugar

15 g fresh coriander (leaves only)

15 g basil (Thai if possible)

For the green curry:

Remove the first layer of lemongrass if it is a little hard and cut it into slices.
Step 3
Peel and coarsely chop the other ingredients and mix them until a fairly fine mixture is obtained, add a little coconut milk if necessary.

For the dish:

Boil a can of coconut milk for 10 minutes.
Step 6
Meanwhile, peel the aubergines in cubes of about 2cm.
Step 7
Then add 2 tablespoons of green curry and cook again for 2 minutes.

Add eggplants, nuoc-nam, sugar, the 2nd can of coconut milk plus its volume of water, 3 to 4 tablespoons of green curry and boil over low heat for 10 minutes.

Then add the shrimps and peppers.
Step 10
Cook gently for about 3-5 min over low heat until the shrimp are pink (do not cook any longer, otherwise the shrimp will become hard and tasteless).

Extinguish and add the coarsely chopped coriander and basil.

Serve immediately with basmati or Thai rice.

Green curry can be prepared in advance. It can be kept for a good week in the refrigerator. For this recipe, you'll have some left. Offer it at the table for those who love it even more spicy. I have been making this recipe for years and it has always been a great success. The list of ingredients can be scary, but it's really worth it.
