Tomato, goat cheese and basil cake

Tomato, goat cheese and basil cake :

3 eggs

150 g flour with added yeast (or 150 g flour + 1/2 sachet of yeast)

8 cl olive oil

12.5 cl milk

100 g grated Gruyère cheese

200 g fresh goat cheese

3 tomatoes (or 2 large ones)

8 chopped basil leaves

100 g smoked bacon (decayed)

Cooking time: 45 min
Step 1
Preheat the oven to 180°C (Th 6).
Step 2
Put the tomatoes in boiling water for a few seconds, peel them and seed them.
Step 3
Then cut them into small cubes and fry them in a frying pan with 1 tablespoon of olive oil and pepper.
Step 4
All the water must evaporate, remove from the fire.
Step 5
While the tomatoes are cooling, brown the bacon, let them drain on absorbent paper.
Step 6
Chop the goat into large pieces, then add the tomatoes, cold bacon and basil.
Step 7
In a bowl, whisk the eggs, add the flour, and mix. Add the oil, hot milk, grated gruyère and finally the goat cheese + tomatoes + bacon mixture.
Step 8
Pour the mixture into a baking pan covered with parchment paper and bake for 45 minutes, until the knife blade comes out clean.
Step 9
Let cool a little, and unmould on a rack.

Delicious cold for a picnic, an aperitif, or with a large tomato salad with red onions.
