Zucchini and basil terrine :

1 kg of courgette

20 cl of fresh cream

1 bunch of basil

6 eggs

Salt

Pepper

TOTAL TIME: 1 HR
Preparation: 15 min
Cooking time: 45 min
Step 1
Cook the courgettes in a pan in a little olive oil. Squeeze them out and set them aside.
Step 2
Mix the eggs into omelettes with crème fraîche, salt and pepper. Add basil and zucchini.
Step 3
Bake in a cake pan (which does not need to be buttered) in a bain-marie in a fairly hot oven (thermostat 7/210°C) for 3/4 of an hour.
Step 4
Unmould.
Author's note
Nutmeg can be added to the preparation. Very good for a buffet (stands well).
