1 zucchini

3 medium potatoes

100 g fresh cream (optional)

Herbs of Provence

Basil

Mint

Parsley...

Coarse salt

Preparation: 10 min
Cooking time: 25 min
Step 1
Peel the zucchini and potatoes. Cut them into small cubes.
Step 2
Put the dice in a saucepan and cover with water. Add a handful of coarse salt. Cook over high heat for about 25 minutes.
Step 3
Once the cooking is stopped, mix the vegetables in water.
Step 4
Add the cream and finely chopped Provence herbs.
Step 5
Serve immediately.
Author's note
An excellent little soup to cook for long winter evenings.... You can replace the zucchini with a pumpkin, it's very good too.
