8 medium-sized courgettes

1 cube of chicken broth (or poultry, or mushrooms)

1 onion or 2 medium

Parsley powder,

Basil

1 bay leaf

Pepper

Salt

2 spoons of olive oil

Step 1
Wash and cut the courgettes into 1.5 cm slices.
Step 2
Boil water with a pinch of salt. Then discard the courgettes and boil them for 8 minutes (so they are tender but not soft). Drain.
Step 3
Meanwhile, sauté the onion in rings in a little olive oil for two minutes. Dilute a cube of chicken broth in a glass of warm water, pour the mixture into the pan with the onion. Add the courgettes, parsley, basil, salt and pepper.
Step 4
Stir gently, lower the heat, cover the pan and cook for 10 minutes.
Step 5
Serve with meatballs.
Author's note
It's one of my friends' favorite dishes. Boiling the courgettes before and browning them with this mixture gives them a very different taste and texture!
