400 g courgette



100 g of tomato



2 cloves of garlic



30 cl vegetable stock



4 tablespoons of olive oil



8 basil leaves

Preparation

Cooking time: 15 min

Step 1

Peel the garlic cloves and put them in a pot with the broth, half the oil and salt.

Step 2

Boil the tomatoes for 10 sec, then peel them, cut them in half and remove the seeds. Coarsely chop the pulp and add it to the pot. Bring to a boil and cook for 5 minutes over high heat.

Step 3

Wash the courgettes, sponge them and cut them into small pieces, add them to the pot and cook for 10 minutes. Let it cool down.

Step 4

Mix the soup with the remaining oil, basil and lemon juice.

Step 5

Set aside in the refrigerator for at least 2 hours.
