150 g mozzarella cheese

3 tomatoes

3 zucchini

20 cl of fresh cream

2 eggs + 2 yolks

10 basil leaves

1 tablespoon flour

20 g butter

300 g shortcrust pastry

Step 1
Scald and peel the tomatoes, dice them and salt them in a colander (30 minutes).
Step 2
Wash, dry, slice the courgettes, then plunge them into boiling water. When the boiling resumes, cook for 3 minutes.
Step 3
Drain and spread them on a folded cloth.
Step 4
Spread the dough and place in a buttered and floured pie pan. Set aside in a cool place.
Step 5
Turn on the oven at thermostat 7 (210°C).
Step 6
Cut the mozzarella into small cubes and arrange the courgette slices with diced tomatoes in between.
Step 7
Beat the eggs and cream, season with salt and pepper, then add the basil. Cover the vegetables with it.
Step 8
Bake for 10 minutes, then lower the thermostat to 6 (180°C) and cook for another 30 to 35 minutes.
Step 9
Serve immediately after removing from the oven.
