Ratatouille candied in the oven :

2 onions

4 cloves of garlic

2 eggplants

3 zucchini

2 peppers

5 tomatoes

1 tablespoon tomato paste

1 tablespoon brown sugar

2 bay leaves

1 tablespoon olive oil

1 bunch of basil

2 sprigs of thyme

1 tablespoon oregano



1 level teaspoon of dried chilli pepper

Step 1
Preheat the oven to 120°C (thermostat 4).
Step 2
Peel and seed the tomatoes, cut them into eighths and then every eighth in width. Put in a saucepan with the sugar, bay leaves, a little dried chilli pepper and tomato paste. Cook uncovered until thickened.
Step 3
Meanwhile, cut the aubergines into large pieces, fry them in a large frying pan with olive oil, free choice oregano and pepper until they start to melt and turn brown.
Step 4
Meanwhile, peel and cut the garlic cloves in half, the onions into large pieces, brown them in another pan with olive oil.
Step 5
In a deep oven dish, pour in the onions and garlic. Salt, add 2 sprigs of thyme.
Step 6
In the frying pan used to fry the onions, fry the seeded peppers and cut into generous pieces until golden brown. Book.
Step 7
Once the aubergines have melted, pour over the onion and thyme layer.
Step 8
Salt. Cover with basil leaves.
Step 9
Use the eggplant pan to brown the courgettes, cut into large pieces, until they begin to brown.
Step 10
Pour the courgettes over the aubergines. Salt. Add the thyme.
Step 11
Pour in the lightly golden peppers. Season with salt and pepper.
Step 12
Pour in the tomato coulis.
Step 13
Bake the whole half covered in an oven at 120°C (thermostat 4). Cook for 4 hours or more, turning the mixture slightly after 2 hours.
Step 14
Let stand for one hour in the open oven before serving.
Step 15
Eat it perfectly cold the next day.

This recipe is not the fastest or easiest for the ratatouille, but it has always won all the votes at home.
