2 tablespoons olive oil

1 onion

3 cloves of garlic

1/2 green pepper

3 tomatoes

250 ml coconut milk

600 g of firm flesh fish (Lotte, Collin or cod)

1 lime

Pepper

Salt

Cooking time: 40 min
Step 1
Cut the fish into cubes. Marinate it in the refrigerator with lemon, salt and pepper.
Step 2
Dice the onion, pepper and tomatoes.
Step 3
Sauté the onion and pressed garlic in hot oil, then the pepper and finally the tomatoes. Sauté for 10 minutes.
Step 4
Then add the coconut milk, cover and simmer over low heat for about 20 minutes.
Step 5
Then salt, pepper, add a little pepper, (not mandatory).
Step 6
Add the herbs and fish and simmer for about 10 minutes.
Step 7
I recommend that you serve this dish with rice pilaf (browned in olive oil and a clove of garlic).
