Chicken curry with pineapple :

500 g chicken breast cut into strips

1/2 bunch chopped coriander

5 cloves of garlic, chopped

2 tablespoons of honey

2 tablespoons soy sauce

2 tablespoons curry powder

5 tablespoons of oil

3 tablespoons nuoc mam sauce

1 can of pineapple in juice (about 180 g)

40 cl coconut milk

chopped basil leaf
For the marinade:

Pepper

Salt
For the curry:

1 small can of tomato pulp

Preparation

Preparation: 20 min
Cooking time: 15 min
Step 1
For marinade: in a mortar, crush the garlic and coriander to make a paste, then add the other ingredients to the marinade and brush the chicken breasts with it.
Step 2
Marinate for at least 2 hours.
Step 3
Heat 2 tablespoons of oil and brown the chicken.
Step 4
In a wok, heat the rest of the oil (3 tablespoons), add the curry, coconut milk, then simmer for a few minutes.
Step 5
Add the tomatoes, chicken and nuoc mam, then simmer for a few minutes. Add the pineapple and simmer for a few more minutes.
Step 6
Serve sprinkled with chopped basil and served with Chinese noodles.
