4 nice slices of country bread (very thick)

Fresh cream

1 goat log (180g)

Step 1
First prepare the onion compote:
Step 2
Peel and slice the onions, then fry them in a frying pan with a little olive oil.
Step 3
When they are golden brown (but not blackened!), add a little water with 1 tablespoon of powdered sugar and let it melt.
Step 4
When the water has evaporated, add the honey (about 3 tablespoons).
Step 5
Cook for a few more minutes, then set aside.

For the toast:

Spread the bread slices with fresh cream.
Step 8
Cut the goat log into slices and place them on the bread slices.

Place a drizzle of olive oil on each toast, season with salt and pepper and add herbes de provence and/or basil.

Put in the oven previously heated to 180°C (thermostat 6) for 5 to 10 minutes, the time to brown.

Remove the toasts from the oven, and add a little onion compote previously reheated.
Step 12
Serve with a seasoned salad.
