1 rutabaga

1 parsnip

4 Jerusalem artichokes

2 carrots

Cumin

Ginger

Basil (preferably fresh)

500 ml chicken broth

Pepper

Salt

Olive oil

Preparation

Preparation: 20 min
Cooking time: 1 h
Step 1
Cut all vegetables into small cubes.
Step 2
Heat the olive oil in a casserole dish and discard the vegetables.
Step 3
Brown them for 5 to 10 minutes and add the chicken broth with a pinch of cumin, a pinch of ginger, pepper and basil.
Step 4
Simmer for about 45 minutes if you like melt-in-the-mouth vegetables, shorten the cooking time by 15 minutes if you prefer firmer and slightly crunchy vegetables; at the end of cooking adjust the salt seasoning.
Step 5
serve and taste!
Author's note
You can choose to use a slice of fresh ginger, without forgetting to remove it at the end of cooking. This dish is an original accompaniment to your meats such as duck breast.
