250 g flour

2 eggs

200 g cooked meat (beef, leftover stew, roast pork...)

100 g cooked spinach, chopped

120 g grated parmesan cheese

1 kg of peeled tomatoes, seeded

2 shallots

1 clove of garlic

Step 1
Mix the flour with 2 eggs and 1 pinch of salt.
Step 2
Add a little water if necessary to obtain a firm and supple dough.
Step 3
Let it rest for 3 hours.
Step 4
Sweat the chopped shallots in a frying pan with a little oil.
Step 5
Add the pressed garlic and tomatoes, salt, pepper, thyme and basil.
Step 6
Simmer for 35 minutes over low heat.
Step 7
Chop the meat with the spinach, half the parmesan cheese, salt and pepper.
Step 8
Preheat the oven to 200°C (thermostat 6-7).
Step 9
Roll out the ravioli dough into 4 large rectangles.
Step 10
Delimit the squares into 2 rectangles, garnish them with the spinach and meat minced meat and close them.
Step 11
Wet the gaps, place the other 2 rectangles, press between each hump of stuffing and cut with a roller.
Step 12
Cook the ravioli in boiling salted water for 5 to 10 minutes (until they rise to the surface).
Step 13
Place them in an oiled gratin dish, cover with tomato sauce, grated parmesan cheese, tomato sauce, then ravioli, tomato sauce and parmesan cheese.
Step 14
Bake for 10 minutes in the oven at 200°C (thermostat 6-7).
