500 g white beans

100 g green bean

150 g macaroni

4 tomatoes

3 zucchini

2 potatoes

2 onions

2 sage leaves (optional)

2 tablespoons olive oil


For the pistou:

1 bunch of basil

4 cloves of garlic

6 tablespoons grated parmesan cheese

4 tablespoons of olive oil

Preparation: 30 min
Cooking time: 1 h
Step 1
Shell the white beans. Clean the green beans, cut them in half. Cut the zucchini into sticks. Peel and dice the potatoes. Slice the onions. Scald, peel and seed the tomatoes and cut them into pieces.
Step 2
In a stewpot, place the zucchini, onion and tomatoes. Add the olive oil. Let it return slowly for 5 minutes.
Step 3
Pour 3 litres of cold water into it, throw in the white beans and sage. Cook for 40 minutes, skimming regularly. Salt halfway through cooking.
Step 4
Add green beans, potatoes and macaroni. Leave to cook for 15 minutes. Season with salt and pepper.
Step 5
Prepare the pistou. Peel and crush the garlic cloves. Add the chopped basil leaves and parmesan cheese. Mix all the ingredients and gradually add the olive oil. Pour half of the pistou into the soup.
Step 6
Serve immediately and present the rest of the pistou separately.
Author's note
You can eat it cold. It can also be enjoyed with grated Gruyère or Parmesan cheese.
