1 shortcrust pastry

10 elongated tomatoes (Roma)

200 g ricotta cheese

2 eggs

5 cl of fresh cream

2 tablespoons olive oil

2 cloves of garlic

basil leaf

50 g Parmesan cheese in chips

Breadcrumbs

Pepper

Salt

Preparation: 20 min
Cooking time: 45 min
Step 1
Preheat the oven to 180°C (thermostat 6). Roll out the dough in a mould, prick the bottom with a fork and sprinkle with breadcrumbs.
Step 2
Whisk the eggs with a fork with cream, olive oil, garlic and chopped basil. Add the ricotta cheese, salt and pepper.
Step 3
Cut the tomatoes into thin slices, place them on the dough. Pour the ricotta mixture over and spread the parmesan cheese.
Step 4
Bake for about 45 minutes. Enjoy hot or cold according to your taste.
