1 kg of veal stir-fry

1 chorizo (mild or extra strong according to your taste)

2 cans of tomato pulp

1 jar of pitted green olive

4 onions

1 bunch of basil

1 bouquet garni

1 clove of garlic

2 tablespoons of oil

Preparation: 20 min 
Cooking time: 1 h
Step 1
Slice the onion and cut the peeled chorizo into rings.
Step 2
Cut the veal into pieces.
Step 3
Sauté veal and minced onions until browned in oil.
Step 4
Add the chorizo, then the tomato pulp, chopped basil and finally the olives.
Step 5
Cover and simmer over low heat for at least 1 hour.
Step 6
This dish is even better prepared the day before and reheated the same day.
Author's note
Add cayenne pepper if you like spicy dishes. Be careful though, depending on the strength of your chorizo. Ideal after cougette terrine with mint.
