6 round tomatoes

2 lawyers

3 tablespoons pine nuts

1 white onion

Parmesan cheese

Balsamic vinegar

For the pistou sauce:

Preparation: 40 min
Step 1
Stone and peel the two avocados, then cut them into very small cubes.
Step 2
Mix the cubes with the lemon juice in a bowl.
Step 3
Immerse the tomatoes in boiling water for 30 seconds, peel them and cut them into small cubes, like avocados.
Step 4
Place these cubes in a colander with salt for 15 minutes, so that the tomato will drain.
Step 5
Mix the avocado, tomato, pine nuts and a finely chopped fresh onion in a bowl.
Step 6
Season with olive oil (3 spoons) and vinegar (1 spoon).
Step 7
Divide the mixture into four whisky glasses, which are left in the refrigerator for one hour.
Step 8
Turn out the four glasses in small plates.
Step 9
Cut out strips of parmesan cheese and place them on the four tartars, finishing with a dash of pistou around the domes.
