2 endives

1 zucchini

1 leek

1 teaspoon curry powder

Herbs of Provence

3 potatoes

2 stock cubes

2 shallots

2 cloves of garlic

1 teaspoon basil

Preparation

Preparation: 25 min
Cooking time: 45 min
Step 1
Chop the shallot and garlic.
Step 2
Brown them in butter.
Step 3
Add herbs of Provence.
Step 4
Cut into small pieces and add the endives, zucchini and leek.
Step 5
Add water to cover the vegetables, then add the stock cubes.
Step 6
Simmer for 5 minutes.
Step 7
Make a purée with the 3 potatoes.
Step 8
Stir in mashed potatoes, add curry and basil.
Step 9
Cook over low heat for 45 minutes.
Step 10
Take the time to let the kitchen smell before tasting, it will give the soup time to rest!
Author's note
Add a little fresh cream at the last minute.
