10 cl of liquid cream
50 cl chicken broth
1 pinch of nutmeg
60 g Parmesan cheese, chopped or grated
12 sprigs of chives
8 basil leaves

Step 1
Peel the avocados, remove the stone, cut them into pieces and crush them with a fork or blender into a fine purée with the lemon juice.
Step 2
Pour the avocado puree into a saucepan, add the liquid cream and poultry broth and whisk.
Step 3
Season with salt, pepper and nutmeg and heat over low heat while stirring.
Step 4
Remove from the fire at the first sign of tremor.
Step 5
Then pour the avocado cream into bowls.
Step 6
Cut the parmesan into very small shavings using a peeler and sprinkle it over the velvet. You can also use grated parmesan cheese.
Step 7
Garnish with chives and basil.
