700 g zucchini

4 tablespoons of olive oil

2 onions

1 l poultry broth

12 basil leaves

1 clove of garlic

3 tablespoons grated parmesan cheese

1 tablespoon of fresh cream

Cooking time: 40 min
Step 1
Sauté the chopped onions in oil until transparent.
Step 2
Add the courgettes in slices, mix and cook 10 min.
Step 3
Wet with broth.
Step 4
Cook over a low heat for 40 minutes.
Step 5
Mix with the garlic clove, basil and parmesan cheese.
Step 6
Add a little cream.
Step 7
Adjust the seasoning and serve with croutons.
