Step 1
- Thaw the large shrimp or prawns and shell them out. Keep 6 prawns with their shells and heads.
Step 2
- Heat the olive oil in a wok or large skillet and cook the prawns.
Step 3
- At the end of cooking, add the finely chopped garlic and a few chopped basil leaves.
Step 4
- Leave the prawns to cook a little longer or turn off the heat until you get to the table.
Step 5
- When ready to serve, put the wok back on the stove. Once the prawns are hot, pour the pastis and light a match over the wok to make the prawns burn.
Step 6
- When the flame is gone, add the crème fraîche, the rest of the basil leaves, salt and pepper.
Step 7
- Serve with fresh pasta.
