400 g beef (chateaubriand)

Chopped basil (frozen)

Olive oil

Grated Parmesan cheese



6 sprigs of chives for decoration

Preparation: 15 min
Step 1
Chop the beef with a knife. In a bowl, put the meat, add the olive oil, parmesan, basil, salt and pepper to taste. Mix well and taste the preparation to make sure it is seasoned.
Step 2
Cover with plastic wrap and place in the refrigerator for 1/2 hour.
Step 3
Just before serving, arrange the plates by moulding the tartar with an ice cream spoon, present pretty balls (1 per plate), decorated with a few sprigs of chives for decoration and why not a few shavings of parmesan cheese.
Step 4
Enjoy your meal!
Author's note
No need for tabasco, capers and onions in this recipe: they would cover the taste of the other ingredients and remove the Italian side of the thing...
