2 handfuls of mesclun
rocket leaf
20 cherry tomatoes
2 scoops of mozzarella
4 slices of parma ham
1 melon
For the sauce:
Olive oil
Balsamic vinegar
Basil
Old-fashioned mustard
Pepper
Salt

Step 1
On a plate, spread the mesclun and arugula.
Step 2
Cut the melon in half, seed it and cut out small balls of melon with a melon spoon and place them back in their skin.
Step 3
Make small skewers of tomato mozzarella on toothpicks that you will then prick around the edges of the melon.
Step 4
Add on the bed of salad the Parma ham cut into chiffonade, the melon pricked with skewers.
Step 5
Make a vinaigrette with olive oil, balsamic vinegar, old-fashioned mustard and basil. Sprinkle the salad and skewers with this sauce.
Author's note
If you have some, you can add candied eggplants and tapenade toast.
