250 g lasagna

2 courgettes

3 eggplants

1 pepper

1 onion

500 g minced meat

10 g Parmesan cheese for the top

200 g tomato pulp

1.5 sugar (for the acidity of tomatoes)

5 cl olive oil

Basil

Oregano

Pepper

Salt
For the béchamel sauce:

25 g butter

25 g cornstarch

1/4 l of milk according to the desired thickness

1 teaspoon of nutmeg

Cooking time: 40 min
Step 1
Preheat the oven to 180°C.
Step 2
Fry the diced eggplants in olive oil, add the pepper a few minutes after the zucchini.
Step 3
Leave to cook over low heat for about 10 minutes.
Step 4
In another skillet, cook the minced meat and onion. Season with pepper.
Step 5
Leave only 3 to 4 minutes then add the tomato pulp and sugar.
Step 6
Season with basil or oregano as desired.
Step 7
Prepare the béchamel sauce (do a little bit but a little thick): brown the flour in the butter and then pour in the milk gently to thicken it.
Step 8
Garnish the dish by starting with the lasagne slices then the meat, béchamel sauce, vegetables and so on.
Step 9
Cover at the end with the meat, a little parmesan cheese and a knob of butter.
Step 10
Bake for 40 minutes.

It is a dish that may seem heavy but very complete. Serve with a green salad, that's enough.
