For the dough:

80 g butter

50 g sugar

20 g almond powder

1 pinch of salt

1/2 vanilla bean

1 beaten egg

125 g flour
For the cream:

3 lemons

150 g butter

3 eggs

3 egg yolks

180 g sugar

1 bunch of basil

Cooking time: 15 min
Step 1
First prepare the dough:
Step 2
Mix butter, sugar, almond powder, salt and vanilla. Then add the egg and flour.
Step 3
Once the dough forms a ball, put it in the fridge for 30 minutes.
Step 4
Preheat your oven to 180°C (thermostat 6).
Step 5
Now spread the dough but not too thin because it is fragile.
Step 6
Put it in tart pans and cook for about 15 minutes.
Step 7
Once cooked, let them cool down.

[If it's too complicated, you can use a ready-made shortbread dough]

Now prepare the cream:

Take a little zest from the lemons by grating them lightly after washing them.

Then squeeze the lemons.

Beat the eggs and yolks with a pinch of salt.

Pour the butter, sugar and eggs into a saucepan. Add the finely chopped basil (about 1 rounded teaspoon per person) and cook over low heat, stirring constantly until the mixture thickens.

Then pour the mixture into the tartlet bases and leave to cool for 2 hours in the fridge.
