Matriciana pasta

Number of people

1 zucchini

1 red pepper

1 eggplant

2 onions

3 tablespoons of olive oil

1 sprig of thyme (optional)

basil leaf

150 g parma ham (or pancetta)

1 can of crushed tomatoes (one large)



Preparation: 15 min
Cooking time: 45 min
Step 1
- Slice the onions and put them in a saucepan with olive oil for 5 minutes over low heat.
Step 2
Cut the vegetables - zucchini, pepper, eggplant - into small cubes, add them to the onions and let them brown for another 5 minutes.
Step 3
Add the thyme, basil and Parma ham previously chopped and put the large can of crushed tomatoes.
Step 4
Season with salt and pepper to taste (be careful not to over-salt because the ham is already very salty).
Step 5
Let it cook over a low heat for 35 minutes, stirring regularly.
Step 6
You can mix this sauce with rice or pasta.
