500 g potato

200 g pasta (ditali, or other short pasta)

2 courgettes

1/2 onion

1 clove of garlic

1 tablespoon tomato paste

3 tablespoons of olive oil

2 l broth (cubes)

Parsley

2 basil leaves (or more depending on taste)

Grated Parmesan cheese

Pepper

Salt

Cooking time: 1 h
Step 1
Peel the potatoes.
Step 2
Leave one whole one and cut the others into small cubes.
Step 3
Wash the courgettes, cut off the ends and cut them in half lengthwise. Then again in half lengthwise.
Step 4
Then cut them into cubes.
Step 5
Chop the onion.
Step 6
Sauté the zucchini and onion in oil, potatoes and onion.
Step 7
Salt, pepper, wet with the broth and add the whole potatoes and tomato paste.

Cover the pan and cook over low heat for about 40 minutes.

Afterwards, crush the potatoes in the pan with a fork and put a little chopped parsley, 2-3 basil leaves and chopped garlic.

Pour the pasta into the same pan and cook.

Just before serving, pour a drizzle of raw olive oil and a little grated Parmesan cheese on each plate.
