200 g plain quinoa

2 organic eggs

4 spring onions

2 courgettes

3 basil leaves, chopped

100 g fresh goat cheese

100 g breadcrumbs

Salt

Pepper

Olive oil

2 mint leaves, chopped

Chervil

Step 1
Chop the 4 spring onions and grate the courgettes. Cook the quinoa and add the eggs. Add onions, zucchini, bread crumbs and, when cold, fresh goat cheese. Season with salt, pepper, one or two chopped mint leaves. Mix well and put 30 minutes in the refrigerator.
Step 2
Form balls the size of an apricot and then flatten them before cooking them in hot olive oil for a few minutes on each side to brown them.
Step 3
Garnish with chervil.
