1 roll of puff pastry

200 g frozen chopped spinach

200 g fresh or frozen salmon

25 cl of fluid fresh cream

3 eggs

30 g grated parmesan cheese

Basil

Chopped dill (fresh or frozen)

Pepper

Salt

50 g Swiss cheese (optional)

Preparation: 15 min
Cooking time: 25 min
Step 1
Thaw spinach in the microwave or pan.
Step 2
Cook the salmon (steam or unsalted water).
Step 3
In a bowl, break the eggs, add the cream, parmesan cheese, salt, pepper and a pinch of nutmeg (this is the device).
Step 4
Place the dough in a mould.
Step 5
Spread the spinach and then the chopped cooked salmon. Sprinkle with herbs.
Step 6
Pour the mixture over the salmon, sprinkle with grated gruyère cheese (optional).
Step 7
Bake in a preheated oven (Th 9 gas oven) for 25 to 30 minutes until the quiche is golden brown.

I serve this dish with a lamb's lettuce salad
