1 pork tenderloin
1 can (400 g) whole tomatoes
1 can (400 g) red pepper
1 onion (or 2 small ones)
Pepper
Salt
Basil
Laurier

Cooking time: 1h30
Step 1
1) Cut the filet mignon lengthwise. Insert onion rings and tie them up so that the rings are trapped in the meat.
Step 2
2) Cut the rest of the onion into cubes. Cut the tomatoes and peppers into coarse quarters.
Step 3
3) Place the filet mignon with onion in an ovenproof dish, surrounded by the rest of the onion, plus 3 or 4 bay leaves.
Step 4
4) Cover with tomatoes and peppers in quarters.
Step 5
5) Add a drizzle of olive oil, salt, pepper, and basil.
Step 6
6) Cover and place in the oven for 1 h 30-2h00 at 210°C (Th 7).
Step 7
Meanwhile, cook the pasta.
Step 8
7) At the end of cooking, remove the bay leaves and blend the onions, tomatoes and peppers.
Step 9
Serve the meat with the pasta and covered with the homemade sauce.
