5 tomatoes

5 firm courgettes

100 g candied dried tomatoes in jars

2 tablespoons pine nuts

shavings of parmesan cheese to grate

Balsamic vinegar (2 tablespoons)

Olive oil (5 tablespoons)

Basil

Chives

shallot

Pepper

Salt

Thyme

Cooking time: 5 min
Step 1
Cut the courgettes into small cubes and sauté them in a little olive oil for 5 minutes over low heat with thyme.
Step 2
Put the tomatoes in boiling water for 30 seconds; then peel them, remove the seeds and cut them into small cubes.
Step 3
Prepare a vinaigrette with oil and balsamic vinegar and place a spoon on the tomatoes and zucchini; season with salt and pepper.
Step 4
Once the zucchini has cooled, take 6 verrines (or ice cream cups) and place them in them:

- 1 layer of candied tomatoes

- a few pine nuts grilled 2 min in a frying pan

- some parmesan shavings

Add the rest of the vinaigrette and set aside in the fridge for several hours.
Author's note
The seasoning varies according to taste, but it is important to spice up the taste of the courgettes. Insist more or less on balsamic vinegar and do not hesitate to make vinaigrette available on the table.
