100 g red pepper

100 g eggplant, diced

6 tablespoons of olive oil

250 g flour

1 sachet of baking powder

2 eggs

25 cl milk

1 clove garlic, peeled and crushed

2 tablespoons chopped basil

70 g grated Emmentaler

Pepper

Salt

Preparation: 15 min
Cooking time: 25 min
Step 1
Sauté the eggplant and pepper cubes in 2 tablespoons of olive oil, then let them cool.
Step 2
In a bowl, mix the flour with the baking powder.
Step 3
Break the 2 eggs, salt, pepper and dilute with milk and 4 tablespoons of olive oil.
Step 4
Add the crushed garlic clove, basil and grated Emmental cheese.
Step 5
Mix well and divide the mixture into 12 muffin cups.
Step 6
Bake for 20 min at 180°C (thermostat 6).
Step 7
Wait 5 minutes before removing from the mould.
