4 medium courgettes

1 tablespoon olive oil

120 g raw rice

1 clove garlic, chopped

2 eggs

40 g grated parmesan cheese

50 g grated county cheese

20 cl of cream

Chopped basil

Cooking time: 40 min
Step 1
In a skillet, sauté the zucchini, peeled and sliced in slices, in oil, for a few minutes.
Step 2
When they are slightly tender, add the raw rice and garlic. Mix, season with salt and pepper and cook over low heat, covered, for 20 min, until the rice is cooked and has absorbed the juice from the courgettes. Remove from heat.
Step 3
In a bowl, beat 2 eggs with the cream, cheeses and basil: pour over the zucchini and mix well.
Step 4
Pour the mixture into a buttered gratin dish and cook for 30 minutes at 200°C (thermostat 6-7).
Author's note
This tian has a very original taste and basil goes perfectly with it. If the zucchini does not make enough juice, add a glass of water to cook the rice.
