5 egg yolks

150 g sugar

40 cl of milk

25 cl of liquid cream

1 bunch of basil

1 teaspoon of pastis (to taste)

Preparation: 10 min
Cooking time: 20 min
Step 1
Bring the milk to a boil and, off the heat, infuse 20 basil leaves in it for 10 minutes.
Step 2
Meanwhile, beat the egg yolks with 150 g of sugar. When the mixture whitens and doubles in volume, pour the basil milk into it after removing the leaves. Mix, wear again over low heat and let thicken, stirring constantly with a wooden spoon.
Step 3
Don't let this cream boil. Remove from the heat and pour in the liquid cream. Let it cool down.
Step 4
When the cream is cold, add the pastis and 20 chopped basil leaves. Make them set in ice.
Author's note
Pastis enhances the flavour of basil, this ice cream is delicious with a red fruit salad.
