Step 1
Pick fresh basil leaves.
Step 2
Remove the stems from the basil leaves and wash them.
Step 3
Gently wipe them with a clean cloth.
Step 4
Place the basil leaves in successive layers in a small glass jar, alternating with a thin layer of coarse salt. Finish the jar with a layer of coarse salt.
Step 5
Then fill the jar with olive oil (so that all the leaves are covered) and close the jar tightly (no sterilization required).
Step 6
Store the jar in a dry and cool place.
Author's note
Basil can be kept for several months. Do not over-salt the dishes in which you add these basil leaves. Keep the olive oil in the jar because it will be deliciously perfumed and will enhance your pasta!
