Cajun-style chicken skewers

Cajun-style chicken skewers

Number of people

3 chicken breasts cut into 2.5 cm strips

Black pepper


Olive oil
For the marinade:

3 tablespoons of mustard

3 tablespoons of liquid honey

1 tablespoon olive oil

2 tablespoons ketchup (or tomato paste)

1/2 teaspoon tabasco

1 clove garlic, crushed

1/2 teaspoon dehydrated thyme

3 finely chopped basil leaves, and a little more to decorate
For the peach sauce:

3 peaches (fresh or canned)

2 tablespoons plain yogurt (or more depending on taste)

1 teaspoon lemon juice

Preparation: 1 hour
Cooking time: 15 min
Step 1
For the marinade, mix all the ingredients in a gratin dish large enough to hold 6 skewers. If you use wooden spikes, remember to soak them 10 min in cold water before use.
Step 2
Lightly salt and pepper the chicken pieces and thread them onto the skewers. Place them in the marinade and coat them carefully on all sides. Cover and marinate in the refrigerator for at least 1 hour, turning occasionally.
Step 3
Meanwhile, make the peach sauce.
Step 4
If you use fresh peaches, immerse them in boiling water for 30 seconds to peel them without difficulty. Remove the stones and cut the fruit. If you use canned peaches, simply cut them into pieces. Mix with the yoghurt, add the lemon juice and pepper.
Step 5
Cover and store in the refrigerator.
Step 6
Preheat the grill to high temperature and oil the cooktop with a brush.
Step 7
Place the skewers on the plate, coat them with half the marinade and cook for 6 minutes.
Step 8
Turn them over, repeat the operation with the rest of the marinade and grill 2-3 min, so that the chicken is cooked through.
Step 9
Serve with the peach sauce and garnish with fresh basil.
