300 g cherry tomato,

150 g fresh onion (one bunch),

2 teaspoons of balsamic vinegar,

1 teaspoon brown squid (or powdered sugar if not available)

5 tablespoons of olive oil

20 basil leaves

1 teaspoon of fleur de sel

Step 1
Remove the stalk from the cherry tomatoes and cut each into three or four slices. Peel and slice the fresh onions into slices of the same thickness and size as the tomato slices.
Step 2
Slice the basil leaves into 2 to 3 mm strips.
Step 3
Place these three ingredients in the serving dish, then add olive oil, balsamic vinegar and squash (or powdered sugar).
Step 4
Mix gently, sprinkle with fleur de sel, and set aside in a cool place (not in the cold!) for 1/2 hour.
Step 5
Stir one last time, just before serving.
Author's note
The aromatic strength of onions and basil is softened by the slightly sweet taste that comes into the mouth, once the palate is "awakened" by the crunchiness of the onions. Basil can be replaced by a mixture of tarragon and mint. This salad is ideal with thin slices of grilled beef fillet.
