2 sheets of brick

1 tomato

150 g mozzarella (one ball, di Buffala if possible)

100 g black or green olives to taste

basil leaf or Provence herbs or oregano

10 cl olive oil

Cooking time: 15 min
Step 1
Preheat the oven to 180°C (thermostat 6).
Step 2
Peel and core the tomato, then dice it and fry it in a pan with basil (or herbes de Provence or oregano) and a little olive oil.
Step 3
"Drain" and dice half a mozzarella ball and the olives.
Step 4
Arrange everything on the brick sheet according to the desired folding (personally I prefer a large triangle or two cigars).
Step 5
Bake at half height for 5 minutes. Serve immediately so that the brig does not get wet.
Author's note
Excellent with aubergines or courgettes (but cooking them lengthens the preparation). A complete dish when raw ham or tuna is added and served with a salad.
