Easy Florentine Pasta Sauce

1 white or yellow onion

1 pepper (any color)

250 g plain or smoked bacon (one tray)

250 g peeled and cut tomatoes (a small tin can)

2 tablespoons balsamic vinegar or 1/2 glass red or white wine to taste

Pepper

Salt

Basil

Parsley

Oregano

Olive oil for cooking

Cooking time: 20 min
Step 1
Cut the pepper into thin strips and cut the onion.
Step 2
Melt them in a little oil. When the onions become transparent (and the peppers "soft"), add the bacon.
Step 3
Leave to cook over medium heat.
Step 4
When the bacon is almost cooked (but still tender) add the can of tomatoes and the vinegar (or wine).
Step 5
Add salt, pepper and herbs to taste.
Step 6
Stir a little and let the juice reduce (this is what takes time) over low to medium heat.
Step 7
Serve this sauce with pasta.

This sauce is mainly used for pasta, but you can also put it in salty pies or pancakes.
