Eggplant tart - feta cheese

5 medium eggplants

200 g feta cheese (in oil or plain)
For Italian seasoning:

Tomato

Garlic

Red bell pepper

Green pepper

Oregano

Onion

Coriander

Pepper

Basil

Pepper

Turmeric

Olive oil

Salt

Shortcrust pastry

Cooking time: 30 min
Step 1
Take 5 eggplants, cut them into 1 cm thick slices, fry them in olive oil, salt them, sprinkle with Italian spices. They have to be very soft.
Step 2
Meanwhile, crush the drained feta cheese.
Step 3
Roll out a pie pan with shortcrust pastry, place half of the eggplants on top of each other, then spread the feta cheese and finish with the eggplants.
Step 4
Bake for 30 minutes in a 200°C oven.
Step 5
Serve with a green salad with feta cheese cubes in it.
Author's note
You can also add very small cubes of dried tomatoes that you can sprinkle over the feta cheese and the second layer of aubergines. It is the spices that give the dish its good taste.
