Number of people

1 puff pastry or shortcrust pastry

20 cl of fresh cream

2 eggs

3 onions

1/2 log goat cheese

1 tablespoon of old-fashioned mustard

1 tablespoon walnut mustard

1 pinch of oregano

1 pinch of tarragon

1 pinch of basil

1 pinch of salt

1 pinch of pepper

Preparation: 20 min
Cooking time: 30 min
Step 1
Spread the dough in a pie pan and prick it, then spread the mustard generously.
Step 2
Onion filling: peel and finely slice the onions on a cutting board with a sharp knife. Melt a nice piece of butter in a frying pan, pour in the onions and sauté for about 10 minutes. Be careful: they must not be coloured. During this time preheat the oven to 180°C (thermostat 6).
Step 3
Arrange the onions on the dough, distributing them evenly.
Step 4
In a bowl, whip the cream and eggs and add salt, pepper and herbs. Pour the mixture over the onions.
Step 5
Cut the goat log into slices and place them on the pie.
Step 6
Lightly cover the whole set with grated gruyère cheese and place in the oven at 180°C.
Step 7
30 minutes later it is ready, let it cool slightly and serve with a salad (such as iceberg lettuce for example) and a fruity white wine.
