1 eggplant

1 zucchini

2 tomatoes

Mozzarella

3 cloves of garlic

Olive oil

basil leaf

Pepper

Salt

Cooking time: 15 min
Step 1
Wash the vegetables. Cut the aubergines and courgettes into slices, fry them in olive oil in a frying pan (or 2, it will go faster) until they are grilled, add salt and pepper.
Step 2
Preheat the oven to 200°C.
Step 3
Cut the tomatoes into slices and the mozzarella into cubes. Squeeze the garlic cloves and mix them with two tablespoons of olive oil.
Step 4
In a gratin dish, alternate the slices of eggplant, zucchini and tomato, season with salt and pepper, spread the pressed garlic and olive oil mixture, sprinkle with mozzarella. Put in the oven at 200°C for 20 minutes.
Step 5
Before serving, sprinkle with basil leaves.

Serve with a few slices of dry ham or a grill.
