4 sheets of brick

8 fresh goats (sold in thick slices)

8 cherry tomatoes

Basil

Parsley

Pepper

Salt

2 egg yolks

mesclun leaf

Raspberry (or lemon) vinegar, olive oil

Cooking time: 6 min
Step 1
In a sheet of brick, place 2 small goats.
Step 2
Arrange 2 cherry tomatoes cut in half on top, and the herbs. Season with salt and pepper.
Step 3
Brush with egg to close the brick tightly.
Step 4
I fold the leaf around the food to form a rectangle or square, otherwise it can also be closed like a dragée bag, and held by making a knot with a sprig of fresh chives, or simply kitchen string!
Step 5
Cook in a pan for about 6 min in a little olive oil (turning halfway through cooking).
Step 6
Prepare a mesclun salad, simply drizzled with raspberry vinegar (or lemon juice) and olive oil.
