Cooking time: 15 min
Step 1
Peel the asparagus and precook them in boiling salted water for 10 minutes, drain well and let them cool.
Step 2
Then fry them in very hot olive oil, brown them well on all sides for about 5 minutes.
Step 3
With the help of a peeler make very fine shavings of parmesan cheese, put them on the asparagus and let them melt gently.
Step 4
Arrange the asparagus on the plates, add a few dashes of balsamic vinegar, a little cooking oil and shredded basil.
